Monday mayhen
Well the first 2 pictures are actually from last nights dinner, for me Mediterranean Chicken and Vegetables with Carrot,Swede, and Sweet Potato mash yum !! Lee had brown rice with his and I'm told it was equally yumtastic!! the picture below is our Mixed nuts and dried fruit trail mix, for snacking on.
This bit really shouldn't be mixed with food but anyhoo its my story hehehe!!
Well today I had to go to the Doctors, as I had a follow up Smear (the Joy!! not) test to be actioned, as last Feb I had abnormal cells show up, then Oct said clear and again we will see. Now I find it interesting that the second one, displayed normal cells after 2 months of my lifestyle changes in placed. I wonder if that had something to do with righting the problem.
The problem that remains is I cant cope with the pain of the actual test which apparently needs addressing and next week I'm off to see my doctor. I thinks its muscular pain like bruising, and it has gotten a bit better, I there fore wonder is continued good health measures with sort that out as well, alas I will let the medical professionals test to make sure there is nothing sinister before I just get on with it.
The more important fact I walked to the Dr's, then went the longer way home, as Lee is walking to and from work to tone up and I don't want to be left behind and flabby, therefore I know I am supposed to be upping my fitness anyway but I don't want to go jogging in the rain around the block as agreed with my physio, I dusted off my Davina workout DVD and did the warm up and part of the boxing routine. Wow what a difference when I used to try working out before my diagnosis and before realising at that stage I was only making things worse, doing a workout felt like I could not get of the ground and that when I did do a jump I would snap my own legs with the weight and gravity mixed !! but today there was me with a spring in my step jump jump box box, ya get me hahaha!! I enjoyed it and It was a truly different experience. My face did not go red, I didn't sound like a rotty on a hot day, nope nope no panting at all, I did not drown in sweat - I could tell my body was heating up to the workout and it just felt right, no collapsing in a heap thereafter needing a clean up on isle 4, I actually have faith I will be able to do this 3-4 times a week to build my stamina up now and will keep my blog posted on my progress x
I still have my fingers crossed that we will get an offer any day now, and am really looking forward to the next stage in my future x
FACT - You can lead a horse to water but you cannot make it drink!! this is so true people ask for my advice I speak honestly and they nod and smile, as a friend said "I can have my gluten free dairy free nasties free cake and eat, enjoy it !!" - and - Rome was not built in one day ....

Scrumlette or Omble anyone hee hee hee
This is inbetween a Omlette and fancy scramble egg!!
It is really tasty, an excellent Paleo/Stoneage diet breakfast or brunch.
Fry in a wok onions, mushrooms, sliced ham, good quality gluten free sausages, peppers if you have any - then add mixed herbs, garlic - cook until sausages display a cooked colour then add in two whisked eggs and stir and scramble the whole mixture - then when egg is cooked add grated cheezly - toss about then serve.
Its so yummy I love it x

Liver and Bacon - full of goodness
Again I must mention that the bacon must be without any chemicals, I find basic bacon or value is just what it is bacon no tampering, so this is my tip for you.
Fry in oil liver chopped into bite size pieces, along with chopped bacon, onion, mushrooms until veg are softened and meat is cooked and changed in colour - then add gluten free gravy and some garlic to enhance the flavour once gravy thickens it is ready - this goes nice with steamed veg, jacket potato or mash x

In a Wok or big pan heat either coconut oil or olive oil, heat mince meat and veg like chopped carrot, peas, sweetcorn, onion, mushroom, brocoli - add garlic I like a fair few cloves in mine with mixed herbs - mix up some gluten free gravy i use one by Marigold. boil swede and carrots and sweet potato, then mash could also use butternut squash - place mixture in the cooking tray or pyrex bowl then place mash on top and bake for about 30 to 40 mins.

Friday full of promise
Well I have done some voluntary work and its actually increased my confidence about working in an office again which was good, I felt very official again and competent. This is great to add to my CV to show that just because I have been out a year with a illness that most people are ignorant upon the subject itself, doesn't mean I cant now be an amazing employee, soo raspberries at the recruitment agencies hahaha!!
I am very grateful to our family member for allowing me this opportunity and have also been successful in fighting the virus type thing off yay me!! Power of the fruit and veggies I tell thee!!
We had a viewing a nice lady with her to grown up girls, they clearly liked the flat and its good sized rooms, I had run around like a crazy woman cleaning and downsizing to maximise the flats potential, they actually asked me if the upstairs flats were smaller?? Nope they have just cluttered it this being the downfall of many who are trying to sell - people want a blank or near to canvas to work there own ideas with neutral peaceful colours. On their way out the older girl said this makes me want to sell and move into it so yippee we thought until the lady then turned and said the fateful words " I ain't sold mine yet".
Has all hope gone??? not on your Nelly, as she could sell this weekend - the next day our estate agent called and said the lady wants the flat, once she has sold she will be making an offer. I'm an optimist the lady looked perfect for the flat, nice cheery disposition, intelligent and caring and she had a cat!! Well it has a cat flap as lee says I cannot take my beloved front door with me (no seriously I love our front door so much but alas the master has spoken and says it must stay boo!!). The good neighbours who are left will get on with this lady and she with them, I just can really see her here. So my fingers are crossed, my hopes they are high and I now await my offer in the coming weeks ahead - don't give up on your hopes and dreams as life is just to short - Vitamix here I come!!

Calcium
Deficiency indications – Muscle cramps and tremors, Insomnia and nervousness, Joint Pain and arthritis, Tooth decay, High blood pressure, Eczema, Hyperactivity.
Snacking on nuts and seeds can help your intake of calcium along with more greens with you salads and roast dinners.
Food sources of Calcium – Almonds, Parsley, Broccoli, Prunes, Pumpkins Seeds, Soy beans, Tofu, Sesame Seeds, Chia Seeds, Spring Greens.
Magnesium
Deficiency Indications - Muscle tremors and spasms, Muscle weakness, Insomnia and nervousness, High blood pressure, Constipation, Fits and convulsions, Hyperactivity, Depression, Lack of appetite, Kidney stones, PMS

Tuna although I would say only twice a week has a good supply of this mineral, so you could have it as a tunasteak, or mixed with sweetcorn with salad, you could mix it with herbs and blended tomatoes to have with Gluten free pasta.

Deficiency Indications – Levels decrease with age.

Sulphur
Used to disinfect the blood, fights against Bacteria and toxins, among other useful actions for the body.

Zinc
Deficiency Indications – Reduced sense of taste and smell, Finger nails displaying white marks, Frequent Infections, Stretch marks, Acne or greasy skin, Low fertility, Pale skin, Tendency for depression, Impaired night vision.
This mineral is found in a variety of foods so in theory there should be something for every one.

Amazing Tuesday morning!!
Today I went to the ME/CFS clinic and the most amazing thing happened??? I was listened too!!! gould blimey I hear you cry!!! Hell ya. They realise from my experience diet is a major part of recovery along with supplements and pacing relaxation techniques - gentle GET (Graded Exercise Therapy) and CBT (Cognitive Behavioral Therapy). They are seeking out approval for a Nutritionist to join there team and also I encouraged them that other illnesses could benefit like cancer, diabetes and many many others yes Hippocrates I'm reviving your name and your ideals cos damn were they bang on!! My own mother is gaining more vitality and shortened sick time since starting with smoothies everyday including regulating her bowels as after all the cancer tabs she takes she gets congested quicker then London I tell thee hehehe
I have been asked to give talks and part take in question and answer time for the clinic with refreshments in between, this being based on my recovery and ideals on nutrition.
They are astounded by my progress and so happy for me, as am I, onwards and upwards and I hope going back to our roots can save us from all the disease.

Good progress
Well I caught germs of my cousin this week, on saturday I had spikey throat, irritating cough with a snotty nose and general yuckyness!! two day later I am feeling mostly better so chuffed that my body is finally acting like it has an immune system with an ability to fight fight fight woohooo!! Im ecstatic as have been waiting for this kinda behavior for ages hehehe!!
Lots of changes at the moment and we have a lady booked tomorrow at 6.30 to view the flat, really hope she likes it so we can get negotiating and moved woohoo x
Working on the forum as a moderator for a diet and nutrition board is strange sometimes I have self doubt and other times I feel really useful. I know and feel the right things and changes for peoples diet just wondering who will take me seriously I hope I get to prove myself real soon x

Valentines day with hearts and Kisses and all xxx
This is the Meal my wonderful Husband Lee AKA Leeb, cooked me for Valentines day!!! Its completely Gluten free; Chicken wrapped in bacon with salt and pepper oven roasted, veg steamed, mrs crimble GF stuffing mix, Gluten free sausages mixed into the stuffing and 2 small roasted potatoes with a gluten free homemade gravy xxx
He also sourced out from Tesco a new product on special by 2 for cheaper a deal at the moment, Worthenshaw's freedom Ice-cream, its made by a lady whose son is sensitive to food intolerance as well and its dairy free, lactose free, sugar only from natural fruit, and nut free its amazing and going to be a firm fav until I have my Vita-mix!! Pizza for when you just have to as only human do it healthier x
See tortilla base - then blend cherry tomatoes cumin garlic cayenne pepper onion powder - spread on base - add veg I used onion mushroom peppers - grate Cheezly and sprinkle on top and cook for 15-20 mins it was fabulous x

Vitamins, Food and Ideas
Deficiency signs, Vitamins – what you can do with food to help aid healing in the body – some basic information and ideas x
The best thing is when you eat more of the universal ingredients you can kill 2 birds with one stone so to speak, its best to look at the food sources and start to step them up in your day to day diet, rather then the signs individually. Many of the Vitamins need each other to work so if you have a wide variety of non processed food in your diet you will cover these and aid you body in its fight for vitality and health. Please note that amounts can be depleted due to pollution, pesticides, addictives like smoking, caffeine and coffee. Try to drink 1.5 litres of water a day to aid your body with its needs as well x love to all x
Vitamin A
Deficiency indications – Mouth ulcers, Acne, poor night vision, Frequent colds and Infections, Dandruff, Thrush, Cystitis, Diarrhea, Insomnia.
You can boost your intake of vitamin A by adding to your daily meals for instance cubed carrot in your bolognaise sauce, along with tomatoes and broccoli, adding veg to your stir fry's and roast dinners. My hubby hated veg and i kept chopping it up and shoving it in all the meals like curry, stews, chilli's and so on now he eats lots and likes it.
Food sources of Vitamin A - Carrots, Sweet Potatoes, Cabbage, Mangoes, Pumpkin ( I sometimes roast this with the roast dinner very tasty), Apricots, Broccoli, Tomatoes, Butternut squash.
Vitamin A works well with a multi vitamin complex, Zinc. It works well with Vitamins C and E to protect it. Protein cannot be utilised without it, therefore other vitamins from your meat, eggs and so on, can be depleted from the body due to this causing further deficiencies.
Vitamin B1
Deficiency Indications - Nervous system disease, Memory and concentration issues, Painful Muscles, Pain in Eyes, Stomach pain and Constipation, Tingly sensations in hands and legs, Beri- Beri, Alcoholism.
My immediate change to help this deficiency in my body was to switch to Brown Rice and I have this 2-3 times a week. I had to give up mushrooms when I was dealing with my Candida, but have happily started adding these back into my diet and this also helps provide the body B1. Once again by adding a few bits to your every day food routine you can be sure to boost the body’s intake of a very importance Vitamin.
Food Sources – Black Beans, Peas (I add these to curries and chilli’s, bolognaise), Brussels sprouts (roast dinner yum), Mushrooms, Egg yolks, Brown Rice, Tomatoes, Squash ( makes nice oven chips with coating of olive oil cumin garlic cayenne pepper, paprika), Peppers, cabbage.
Works well with other B vitamins, magnesium and manganese
Vitamin B2
Deficiency Indications – Burning or gritty eyes, Sensitivity to bright light, Sore tongue, Cataracts, Split nails, Cracked lips, Eczema or Dermatitis, dull or oily hair.
The best thing about this is once you have added just a few extras to your normal meals they cover a lot of the vitamins and minerals that you may be deficient in so I will jump straight to the sources.
Food Sources – Mushrooms, Broccoli ( I used to hate this and now cant get enough of it steamed with carrots), Mackerel ( I have this sometimes for breakfast as good for the oil it contains or for lunch with salad), Egg yolk, Cabbage, Bean sprouts( stir fry easy to do very healthy x), Tomatoes, Pumpkin, Avocado.

Tuna once or twice a week, with a jacket potato, with salad, in a bake gosh it’s so universal. Chicken stir fry or fajitas, stew or roast. Add Sesame seeds to a salad or stir fry, just a few ideas to increase this vitamin.
Food sources – Tuna, Chicken, Turkey, Peanuts ( not the roasted type lol), Mushrooms, Tomatoes, Cauliflower, Squash, Sesame Seeds.
Works well with Chromium and again other B vits.
Vitamin B5
Deficiency Indications – Muscle tremors and cramps, Apathy, Concentration issues, Burning Feet and tender heels, Exhaustion after light exercise, Anxiety and Tension, Grinding Teeth when sleeping, Nausea and Vomiting, Lack of Energy.
Adding lentils to chilli’s, stews/casseroles, soups can help gain the body this precious vitamin. Organic eggs I do like mine scrabbled for breakie. Lambs Liver which I love in a onion and mushroom gluten free gravy with veg yum oops seem to have gone of on a tangent there sorry, celery to soup or salads.
Food sources – Mushrooms, Eggs, Avocados, Lentils, Lambs Liver, Tomatoes, Peas, Cabbage, Celery.
Works well with Biotin, Folic Acid ( i had a huge deficiency ), and other B Vits.
Vitamin B6
Deficiency Indications – Water retention, Tingling Hands, Depression and Nervousness, Irritability, Acne, Anaemia, Muscle tremors and cramps, Lack of Energy, flaky skin.
I like using bananas in my smoothies, and also with a cashew cream recipe (soak cashews for couple of hours then drain and blend) with mixed nuts is very nice. By adding Kidney beans in chilli you will aid to this vitamin being used in the body. Choose a fish night and have it with veg ( I cook haddock, cod with garlic rosemary mixed herbs and its very tasty sometimes a squeeze of lemon serve with peas and a carrot and swede mash.
Food source – Bananas, Red Kidney Beans, Brussels sprouts ( did someone say roast dinner oh yes please), Broccoli, Carrots, Eggs, Lentils (go on get your stew on), Peppers, Onions, Squash, Chicken, Fish.
Works well with Zinc, Magnesium, and other B Vitamins.
Vitamin B12
Deficiency Indications – Bad Hair condition, Eczema and Dermatitis, Mouth Sensitive to hot and cold foods, Irritability, Anxiety or Tension, Constipation, Lack of Energy, Place Skin, Tender and sore Muscles, Depression. ( this was another badie for me)
When I’m low in this my body actually craves my Lambs Liver recipe as mentioned a tad earlier I actually have this in the fridge now and have every intention of having it tomorrow hehehe!!
Food Sources – Sardines, Eggs, Tuna, Cottage cheese, Tuna, Lambs Liver, Turkey, Chicken, Lambs Kidney (not my fave if im honest eeewww but my dad loves them??)
Works with Folic Acid and other B Vitamins (bet you guessed that hahahaha)
Folic Acid
Deficiency Indications – Anaemia, Eczema, Cracked Lips, Pre-maturing greying Hair, Anxiety or Tension, Memory Issues, Lack of Energy, poor appetite, Stomach pains, Depression, Sore and Red Tongue.
A good sauce for Gammon – honey parsley garlic, really complements it, broccoli in your stir fry is lovely, walnuts with salad and sesame seeds.
Food sources – Peanuts, Broccoli, Walnuts, Chicken, Parsley, Sesame Seeds, Avocados ( so versatile), cauliflower, Lentils, Dates, Lambs liver.
Works well with B Vitamins.
Biotin
Deficiency Indications – Dry Skin, Poor Hair condition, Going grey early, tender sore muscles, crappy appetite and Nausea, Eczema adn Dermatitis.
Grapefruit in the morning, salad with mixed lettuce leaves, snack on Almonds.
Food sources – Eggs, Lettuce, Almonds, Sweet Corn, Cauliflower, Tomatoes, Grapefruit.
Works well with B Vitamins, Magnsium and manganese.
Vitamin C
Deficiency Indications – Colds, Infections, Lack of Energy, Bleeding and Tender Gums, Nose Bleeds, Red pimples or skin, Easy Bruising, Slow wound healing.
Peppers added to fajitas, pizza (make your own yummy gf version), chilli, bolognaise.
Food sources – broccoli, Peppers, Lemons, Tomatoes, Avocado, Cauliflower, Orange, Cabbage, Melons, Peas, Guavas, Papaya ( I love snacking on exotic fruit)
Works well with B Vitamins to produce Energy, and Vitamin E as an Antioxidant.
Vitamin D
Deficiency Indications – Joint pain and stiffness, Backache, Tooth decay, Muscle cramps, Hair Loss, Rickets, Osteomalacia.
This is hard to achieve great results with food as the best source is the sun hitting the skin which I believe roger knows a great deal about especially regarding supplementation. But you can get small amounts from the following.
Food Sources – Herrings, Mackeral, Eggs
Vitamin D Needs calcium to be absorbed please note I will be providing a Minerals thread like this soon as well but for good sources of calcium I recommend Spring greens.
Vitamin A, C protects Vitamin D.
Vitamin E
Deficiency Indications - Lack of Sex Drive (steady scrabble players hehehe), Exhaustion after Light exercise, Easy bruising, Slow Wound Healing, Infertility, Loss of muscle tone, Varicose Veins.
Sunflower seeds in a seed mix is a nice snack, Sesame seeds on your salad and stir frys.
Food sources – Unrefined Corn oil, Sunflower Seeds, Sesame Seeds, Beans, Tuna, Sweet Potatoe, Sardines, Brown rice, Eggs, Soybeans.
Works well with Vit C and Selenium, Zinc and Copper
Vitamin K
Deficiency Indications – Haemorrhage, It helps the blood clot when wounded
Use tomatoes as a base for your sauces, add Brussels to your roasts or chop for bubble and squeak, have a bean casserole or salad.
Food sources – Cauliflower, Brussels sprouts, Beans, Broccoli, Lettuce, Potatoes, Corn Oil - Helps to aid healthy intestinal bacteria.
Tortillas gf recipe

Tblspn olive oil

Fry them until golden on each side x can be used to dip in fresh made salsa or fajitas with chicken and colourful veg or as pizza base with tomatoes veg and vegan cheese x

Only Human
Diet and nutrition plays a big part I'm my life now, which usually I'm quite on the ball with what I'm eating even when eating out I choose the best options to be the closest to my special diet as possible.
On Saturday I was given a box of Thornton chocolates, Lee and I decided to eat them, well the next day my anxiety was huge I didn't want to go out and i felt down, was experiencing massive mood swings, was argumentative and aggressive completely unhinged!!
This is not like anything I have experienced since I started my special diet which has helped my recovery leaps and bounds, and when I used to have these mood issues pre-august 2010 they were not to the levels I had yesterday, which shows where I dont usually have sugar, the effect was immense - now I remember why I say no usually to such treats unless they have been made with xylitol or stevia.
I was devil woman for half (like the exorcist girl on PMT!! ) the day. I then started my normal eating habits and supplements stayed in my room with no noise or distractions until I felt ready to be out and about.
Its safe to say Lee has put me on a Sugar ban and hid anything out of my reach on top of the cupboards as sugar cravings are nasty but im back on form again with no intention of ever doing that again. Oh and yes I salvaged sunday and had a lovely afternoon x

Wednesday short and sweet
Today I have been to the play group with my sister in law and nephew, and was amazed at the difference in me, how positive and strong I now am!!! driving has become second nature again and I am so glad as the freedom I used to experience from driving made life so much better and I was destroyed when I lost the ability!! I really feel for my fellow sufferers who have lost this marvelous ability and hope that they can resume this asap. Tea was homemade paella with seafood and veg was tasty.

Is it only Tuesday OMG people!!
Well today feels like it should be friday already, I have studied, done wash loads, sorted out about an EPC (Energy Performance Certificate) for the flat and so on and so forth.
I'm really trying to enhance my learning with books, books and you guessed it more books. I am totally in awe of tribes who have live such an old way of life and yet I bet the elderly could be of more use then I sometimes. I love reading about doctors who are open about new ways of healing and there resources and evidence, ok I know some are a load of old twaddle but some are really leading the way in progress of new ideas and results.
Tissue Salts basic explanation
Ok I am going to try to be basic with this information.
It is not meant to suggest in any way against what medical advice you have been given and this is just what has helped me and I wanted to create a better understanding to why diet is nothing to be laughed at, nor is it a reason for arguments.
I hope to give a general idea as to why the body can get sick with illness and disease and how the diet can help to improve matters, and in some instances enhance recovery.
In the late 19th century a Dr Schuessler isolated 12 types of tissue salt and realised the body needed a healthy balance of these tissue salts to function and ward of illness, and return the body to good health and vitality.
Basically each cell in the body which helps the body and mind work, contains these 12 tissue salts if the body does not have the correct balance then deficiency occurs resulting in eventual disease and illness.
Once you restore the tissue salt balance, the body can heal and improve the body and its ability to function.
Due to environmental factors and pesticides and other junk that is now chucked in food willynilly, today's body is not receiving the goodness it requires along with intolerance's to certain foods the body can not absorb and work efficiently. Each cell requires water so the body can function also and tea, coffee, squash and coke are not going to give the body the precious water it needs to help each part of the body and mind work properly. If you stop the intolerance the body can start collecting the nutrients and use them where required, providing non processed foods can then provide the nutrients for it to absorb. We are lucky that every thing which is matter has the 12 tissue salts therefore diet can be key to grabbing back good health and vitality.
Dr Schuessler has a book if any one is interested in this further, and a lot of homeopaths use tissue salt tablets which are safe to use even in pregnancy if you wanted to research a reputable therapist. I have been processing this through diet and supplements (due to the foods having lots of pesticides and add in's they too lose valuable nutrients) as many will have noted and I can say our weekly shop only comes to £35-40 to feed two people.
I have many recipes for living without wheat, gluten, dairy, and sugar if anyone is thinking about looking into how diet can help Please ask and I will be happy to suggest food changes and alternatives to the best of my ability.

A crazy week that flew by me.
Its been a week just over since I last posted ...wow... its been the busiest one I have encountered since my bad crash December 2009!!
On the Saturday went out for my dear Nan's 80th Birthday, with all the family, a nice surprise for her. I went to the Toby Carvery and had gammon and turkey with lots of yummy vegetables I choose the vegetable gravy and had a nice meal and was so full thereafter I didn't really care that the rest of the party were eating fudge cake and other goodies. I drank water at the restaurant, and decided to go for a catch up at the local pub with the other members of my family some were over especially from Ireland and I think that talks volumes in its self hahaha...I had a endless wine glass...told all my family I love you and why...then went home and was a little ill oh well I certainly don't do this often (thankfully thinks my hubby) and left hubby to clean up. Conveniently I woke next morning not remembering that part as it has completely been vanished from my memory shame I cant say that about poor Lee's memory but at least he still loves me... seems I have forgotten how to drink...
This leads me to Sunday's big hangover but considering that type of night would have left me bed ridden for a week, I was up washed dressed just managing to be presentable for my nephews 2nd birthday party and helping out putting it all together...well that is such improvement that even others noticed it. Unfortunately when the cheesy Cheddars where put out I started to feel the night before sickness return and had to go out for fresh air - me thinks I should practice more precaution when out with my Irish side of the family..live and learn people live and learn. We had a lovely time and after the family decided on KFC now I don't wish to be the killjoy I therefore had chips and a corn on the cob which I guess once every now and a then will be handled as it did not stop me charging along.
Monday I went to visit my parents home in Dagenham oh how lovely it once was, and now is complete scare hole hope they move soon. We had a lovely catch up and then returned home for some well deserved pacing time ...pacing is so important and I will just sit and say I'm pacing respect that please, but good friends and family now know what its about and leave me be.
Tuesday was nephew birthday part two at the local kiddy land place. We took it in tag teams to run around with my nephew and friends which I must admit was awesome I went up some of the things with him and played rarrr get ya!! this involves me going rarrrrr with cat hands wiggling my pinky's and saying get ya, to which he then returns for a hug and a rarrr so much fun. After I returned home and paced again.
Wednesday I got up I drove the car (I owe this to fish oil of good quality) picked up some free range eggs off a friend and then went to playgroup with my sister in law and nephew which was a laugh all us adults had a great chat and catch up. Pacing then took place on the afternoon and the Thursday and Friday was just shopping.
All in all I have improved ten folds and I think along with my supplements and the diet, now that the smoothies have been included my digestion is greater and so is my sleep, go figure!!! and really starting to realise what energy is now such a strange feeling that I have never had in previous years its an amazing feeling I cant describe and that others take for granted.
